Forrest Gump of Squash

Summer squash, particularly the yellow variety, is a very popular vegetable in the South and really popular in my garden. You can grill it, broil it, steam it, stir-fry, deep-fry, boil, bake, or stuff it.

I feel like Bubba in Forrest Gump in the evenings when I list the ways we could have squash to Big Buckaroo.

There's um, fried squash, baked squash, squash casserole, squash puffs, squash pancakes, squash souffle, cream of squash soup, squash patties, squash bisque.....



This is what I picked from my garden today!


I am overrun with squash right now and the cucumbers are coming in full blast. What am I going to do with all these cucumbers?????

Does anyone have a church social that needs a squash casserole that can feed a lot of folks? Or, loves cucumbers? Give me a call or stop by, I am drowning in squash and cucumbers!

Anyway, like I was saying, there's um, fried squash, baked squash, squash casserole, squash puffs, squash pancakes, squash souffle, cream of squash soup, squash patties, squash bisque.... um, that's about it.

Now, as I walk to the garden I am thinking ~
Run Park Wife Run!

I am jealous of your overabundance of veggies. I didn't my garden in this year. I am growing a bunch of weeds.

cucumbers are my favorite! too bad you live too far away from me. You can always make pickles. The sweet pickles and salt pickles are my favorite (just email if you want the recipes, they are fairly easy).

Our squash haven't started to come in yet. I think my favorite way to eat them-broiled in the oven or grilled.

Oh my goodness, that is a LOT of squash. We did not make a garden this year, never stopped raining long enough. Darn it, I love fresh vegetables, but there is next year and we will be a little more settled into the house by then. (hopefully!) I love both cucumbers and squash, I better go to the farmers market today and see what they have! Have a great day.

If the price of food keeps going up, you may want to consider putting some of that squash in the freezer.

Do you not make pickels with the cucumbers??? You need to freeze your squash and use it later.

Also if you just take the cucumber cut it up put them in vinager with onions, and then put them in the fridge, they are really good.

Maybe some day the deer will stop eating my garden and I will have some of my own.

Oh, I love me some squash. And my babies love them some squash. And my babies' momma has no idea how to grow them some squash.

How exciting! We just had our first two zucchini and our first two yellow squash for dinner yesterday (hibachi style).

I wish I lived close to you. I LOVE, LOVE, LOVE cucumbers, but not so much the squash.

I would GLADLY take some of that squash off of your hands if you were close by. ;)

I love to saute it with zucchini and onion and some fresh basil.

YUM.

We have tomatoes in our garden and they're not even ready yet!
